Potato mash muffin recipe.

This is a new family favourite, everyone loves mash and I wanted to find a way to make this side dish a main. Well here it is. It's not the quickest meal to prepare, but if you have the minutes to wait (not spend in the kitchen) then this is a good one for you.

Makes six:
2 medium potatoes, peeled and diced
1 teaspoon of butter
1/3 cup of milk
2 Tbsp frozen corn
2 Tbsp frozen peas
1 egg

Preheat oven to 150 degrees (Celsius)
Boiled the potatoes until soft (approx 15 mins depending on piece size)
Grease muffin tray (I always used olive oil)
Once boiled drain water, return potato to pot
Add butter and milk
Mash together
Add peas and corn (or veg of your desire)
Add egg, mix for 1 minute
Spoon mix into muffin tray
Cook for 35 minutes, or until golden brown
Leave for five minutes
Enjoy
