Grandma Jo's cheesy chicken pie.

This pie is one of my absolute favourites, my mothers simple recipe, so delicious and easy.



Preheat oven to 180*

Grease two 8 piece muffin trays.

Ingredients:

One roast chicken, cooked and broken into pieces.

500g of champignons (stems and pieces)

Puff pastry- 6 sheets.

Cheese sauce:

2 table spoons of flour

2 cups of milk

50g butter, melted

1 cup cheese grated.

Salt to taste.

To make sauce:

Whisk together butter, milk, and flour. Heat at one minute intervals stirring each time until thick (5-6 minutes). Mix in cheese and stir until smooth consistency. Add salt to taste. Set aside in fridge.

To make pie:

Cut pastry into fours. Place pastry inside muffin trays. Using a fork, pierce pastry once each. Heat in oven for 7 minutes, or until crispy. Try to avoid browning pastry.
Drain champignons and mix in with chicken pieces. Mix in cheese sauce.
Spoon mixture into prepared pastry.
Using an egg ring, cut out lids for the pies. Put into place. Grease lids (I use olive oil).
Cook for 25 minutes, or until golden brown.
Allow to sit for 5 minutes.

Serve with salad for a perfect summer meal, or steamed veg in winter.

If preferred replace the muffin tray with a pie dish and create a large family pie, we often do!

  1. You know, I remember your Mum baking a chicken pie on Xmas eve when you came and stayed with us in Port Augusta :). I remember the champignons and everything :) she altered it for me slightly though as I don't like cheese :). Fond memories :)
